Mango Lassi & Strawberry Basil Popsicles
end of summer means finding the perfect popsicle recipes

Mango Lassi Popsicles 

Serves 6

1 cup mango chunks
1 cup mango juice
1 cup Greek yogurt
1 tbsp grated fresh ginger
1 tsp cardamom
Zest of 1 lime

Puree mango chunks with an immersion blender. Add juice, ginger, cardamom and lime zest. Pulse to blend. Premix the Greek yogurt so that it is an even texture. Then add yogurt to mango mix and give a gentle stir or two by hand. This gives the pops a marbled effect – more mixing will happen when you pour into the molds. Pour the mixture into the molds and let freeze overnight. To remove the pops from molds, run under warm water and then slide out.


Strawberry Basil Popsicles

Serves 6

1 lb strawberries
10 fresh basil leaves
½ cup water
2 tsp honey

Hull and quarter strawberries. Coarsely chop basil. Place all ingredients in a large pot and bring to a boil. Reduce to a simmer and let cook 10-15 minutes until the strawberries are soft. Blend with an immersion blender. Remove from the heat and let cool. Place the mixture in popsicles molds and let freeze overnight. To remove the pops from molds, run under warm water and then slide out.
